Grilled Chicken or Salmon with Salsa Veracruzana
An Ideal Summer Entree You Can Enjoy
At Hobee's - Or At Home!

You can enjoy this sensational item or several other dinner specials
all summer long at the following Hobee's locations:
Palo Alto, Pruneyard, Redwood Shores, Stanford
or Sunnyvale.  (Served after 5:00 PM)

Ingredients:

Chicken Breast, breaded and grilled, 1
-OR-
Salmon Filet, grilled, 1

Salsa Veracruzana (recipe follows) 3 oz.
Onions, chopped   1 cup
Olive Oil    2 Tablespoons
Fresh Garlic    1 Tablespoons
Tomatoes, chopped   2 cups
Lime zest    1 Teaspoon
Fresh Thyme    1 Teaspoon
Fresh Jalapenos chopped  1 each
Capers     1 Tablespoon
Sliced Green Olives    1/3 cup
Salt to taste

Method:

Sauté onions in olive oil over medium heat, about 5 minutes.  Add garlic, and cook an additional minute, stirring constantly.  Add tomatoes, thyme, lime zest and cook for about 5 minutes.  Add capers, olives, jalapeno, and 1/3 cup of water and cook for another 5 minutes.  Serve warm.
